Preparing 3 meals plus snacks for two hungry babies (and for us too) is exhausting. Everyday, I look in the fridge and try to formulate what I can make. I think… “What can I make that the boys would eat? What is something easy that all four of us can enjoy?”
We often have rice because rice seems to be our boys’ favorite; occasionally they accept pasta. But, today I made cream based pasta for dinner, and it was a hit! The boys ate so well.
I sometimes make dinner that isn’t received well by my boys and they end up eating Cheerios for dinner, so when they do eat what I cook, I get super excited.
Let me share this super easy quick recipe for busy (or lazy?) moms like me or dads out there! Why do I say “lazy”? Because I was able to make it in less than 30 minutes using just a frying pan and a pot!
What you need (4 servings):
- some spaghetti (or any type of pasta) noodles
- 200g of chicken breast
- handful of baby spinach
- half an onion
- 200cc water
- 1TBS butter
- 100cc milk
- 2TBS flour
- 1tsp chicken stock
What you do:
1. Cut up onion and chicken into small pieces.
2. Boil onion and chicken in water with chicken stock in a frying pan until they are cooked.
3. Add pasta noodles and baby spinach in the same pan (add water if needed) and boil for 5-7 minutes.
4. In a different pot, melt the butter, then add flour to make a roux, and add milk little by little while mixing well to make a thick creamy white sauce.
5. Now combine the white sauce into the pan and cover the pasta in the cream sauce.
6. Just serve it on a plate for your family and enjoy!
This is pretty healthy and I didn’t add any spices or herbs so the boys can eat the same food as us too, which they seem to enjoy.
I am all for quick cooking when my husband is at work and I can’t be away from the boys for too long.

As for my life blog post here, I just wanted to thank everyone who commented on this blog and my instagram concerning M’s condition. Thank you so much. His fever lowered after 2 days of antibiotics and he seems to be feeling better. However, the poor guy had rashes all over his body the day before yesterday, which brought us right back to the clinic… and found out he either has an allergy to amoxicillin (antibiotics) or has Roseola virus. So now he is off the antibiotics and we are keeping an eye on him.
This week has been challenging for me. I know we as parents have to be strong and we are there to comfort the babies, but it makes me very emotional to see our baby in a weaker state, which in turn, is very emotionally draining on me. Also, because M is trying to fight his infection and rashes, he is more clingy and always comes to my lap. This is great, but now I worry I haven’t given enough attention to T. I must have a bit of cabin fever or something, I keep worrying about too many little things. I am sure all will get better once everyone is well and can enjoy the beautiful spring again!
